At the foot of the Sainte-Baume Massif, at an elevation of 400 meters in the Provence-Alpes-Côte d’Azur region, the Blacailloux estate produces three lines of organic Provence wine under its appellation of origin, Coteaux Varois en Provence. Three colors, nine vibrant expressions, each revealing the salinity of the bauxite soils and the freshness of the Var microclimate. Our production comprises five complementary lines of organic wines, all sourced from the same hundred hectares of vineyards, plot by plot. Syrah, Grenache, Cinsault, Rolle, and Cabernet Sauvignon thrive at an altitude of 400 meters on the bauxite soils of the Var region, producing refined Provence wines with a precise, briny aromatic profile.

Our Favorite Blacailloux : The “Sœurs” cuvée—Li Sore in Provençal—offers the tangy freshness of a pale pink wine accented with notes of red berries, while supporting several organizations dedicated to defending women’s rights and combating violence against women. Choosing a wine from Provence is all about savoring moments shared with others. Our Joio rosé is perfect for an aperitif and pairs well with melon-and-ham salads, stuffed vegetables, or grilled fish skewers.
Our Miraia and Aquino whites, made from 100% Rolle grapes, pair well with fish, aged goat cheese, and linguine with zucchini cream sauce and shrimp.

For Blacailloux, producing Provence wine means, first and foremost, protecting the terroir. Of the estate’s 600 hectares, only 100 are planted with vines, in plots scattered among woods, olive groves, lavender fields, and beehives, all under a Mediterranean climate. This living mosaic accounts for the vibrancy and minerality of our wines, as much as the precision of our handcrafted work. For over a century, four generations of the Chamoin family have carried on this legacy. Today, Valentine de Lasteyrie and her sisters—great-granddaughters of the founder—share a common vision: as winemakers committed to supporting women in the wine industry, dedicated to biodiversity, and committed to protecting the environment.

Our Provence wines are based on Syrah, Grenache, Cinsault, Cabernet Sauvignon, and Rolle. Added to these, under the IGP designation, are Merlot, Sauvignon, and Floréal. This diverse blend, planted at an altitude of 400 meters on bauxite soils, gives the Aquino, Miraia, Joio, Saint-Probace, Sœurs, and Héritage vintages their refined and briny character.
Our Provence wines stand out from other wines thanks to their high-altitude terroir, at 400 meters in what the wine press calls “Var Siberia.” This highly continental climate produces significant temperature fluctuations between day and night, sometimes with a difference of more than 25 °C: the day ripens the grapes, while the night refines them. The bauxite soils impart a salinity to our wines that is rare among Provence estates.
Yes, the estate’s gift shop is open six days a week and offers guided tours and tastings booked in advance for groups of 2 to 25 people. Introductory wine-tasting workshops, beekeeping workshops in April, and grape-harvesting workshops in September round out the estate’s wine tourism offerings.
Delivery of our Provence wines in France is shipped in boxes of six 75-cl bottles or three 150-cl magnums. Shipping costs are €10, but are free when you purchase 18 or more 75-cl bottles. Orders are placed through the online store, with order tracking handled by our customer service team.
The best food-and-wine pairings vary depending on the color and vintage. White wines pair well with fish, scallops, and aged goat cheeses. Rosés are perfect as an aperitif, paired with melon-and-ham skewers, tuna tataki, or tagines with mild spices. Reds, on the other hand, are best enjoyed with braised meats, homemade tarts, and a platter of Comté or Mimolette.
The shelf life of our Provence wines ranges from 2 to 15 years, depending on the vintage and color. Saint-Probace and Sœurs are best enjoyed within 2 years of the vintage. Joio can be cellared for 2 to 5 years, Miraia for 3 to 10 years. Aquino can be cellared for 8 to 15 years depending on the color, and Heritage red for up to 15 years.
