SAINT-PROBACE

The first sip

Saint-Probace is the estate’s first sip—one that goes straight to pure enjoyment, without detours. Here, the wines of inland Provence are all about simplicity: clean fruit, a poised freshness, and a finish that makes you want to come back for more right away.

High-Altitude Terroir & Precise Techniques

This cuvée originates at the foot of the Sainte-Baume massif, from vineyard plots situated at altitudes between 350 and 400 metres. The clay-limestone terroir—distinctively marked by bauxite—imparts a sense of uprightness and salinity that defines every wine in the range. Whether white, rosé, or red, the wines are crafted to express vibrancy and purity.

In the winery, the process is precise and minimalist to ensure that none of the energy of the place is lost. The harvest begins at dawn to capture the fruit’s freshness, and pressing is done in an oxygen-free environment to preserve the full aromatic expression. We’re not looking to make a statement, but rather to capture the purity of a single moment.

Saint-Probace is the wine of improvised tables, lunches that stretch and glasses that empty with ease. A luminous cuvée, faithful to the spirit of Blacailloux, which reminds us that beauty often lies in what is frank and unpretentious.

The three Saint-Probace wines

White, Rosé, Red — three expressions of the same terroir, three ways to enter the world of Saint-Probace.
